Fall = Pumpkin Mayhem am I right? Not sure if you’ve been to Trader Joe’s in the past couple weeks but the clock has struck Fall and now Trader Joe’s has turned into a bonafide pumpkin….its everywhere…its great. Best part is this means their Pumpkin Bread/Muffin Mix is back! The recipe below is a deliciously easy way to upgrade the box mix and make your favorite pumpkin cream cheese muffins at home!
INGREDIENTS
Pumpkin Muffin Mix
Trader Joe’s Pumpkin Bread Mix
2 Large Eggs
1/2 Cup Vegetable Oil
1 Cup Water
Cream Cheese Filling
1 8 oz Package of Neufchatel Cheese (or cream cheese)
1 Large Egg
1 Teaspoon of Vanilla Extract
2 Tablespoons of Brown Sugar
DIRECTIONS
- Preheat oven to 350 degrees
- Combine ingredients for pumpkin muffin/bread mix as directed on the box set aside
- In a separate bowl combine cream cheese filling ingredients and beat with an electric mixer until smooth
- Grease muffin tins with butter or fill with baking cups, then fill cups 3/4 of the way with muffin mix
- Drop a heaping teaspoon of cream-cheese filling into each baking cup
- Sprinkle with cinnamon sugar (optional)
- Bake for 20 minutes
- Enjoy!
